Smores Cupcakes

Jack Scalfani collaborates with DIVAS CAN COOK channel. watch the rest of this video at www.youtube.com Here is the recipe: CUPCAKES INGREDIENTS 1½ cups graham cracker crumbs ¼ cup sugar 6 tbsp. unsalted butter, melted 8 oz. chocolate bar, finely chopped Marshmallows 2 cups granulated sugar 1¾ cups all-purpose flour ¾ cup cocoa powder 1½ tsp. baking powder 1½ tsp. baking soda 1 tsp. salt 2 large eggs, lightly beaten 1 cup whole milk ½ cup vegetable oil 2 tsp. vanilla extract 1 cup hot water MARSHMALLOW FROSTING INGREDIENTS 1 1/2 cups powdered sugar 1/4 cup water 2 egg whites, room temperature 2 tablespoons light corn syrup 1/4 teaspoon salt 1 teaspoon vanilla extract (optional) Preheat oven to 350. In a large bowl, stir crushed graham crackers, 1/4 cup sugar and melted butter until crumbly. Place cupcake liners in pan. Add 1 tablespoon of graham cracker mixture per cupcake liner. Use the bottom of a shot glass or spice bottle to flatten the crumbs. Bake for 5 minutes. Add about 4 marshmallows and a few pieces of chopped chocolate to each cupcake. Set aside. In large bowl sift together 2 cups sugar, flour, cocoa powder, baking powder, baking soda and salt. Add in eggs, milk, vegetable oil, vanilla extract and water. Mix on medium speed until well incorporated. Batter will be runny. Spoon batter evenly into cupcake liners, about 3/4 full. Bake for about 18-20 minutes. The marshmallows may float to the top. (I found that the cheap brand of marshmallows tends to stay put in

    I have seen tje hot water trick ised before in mudd cake recipes and self saucing pudding recipes. It helps make a richer denser more moist end result and if u dont mix the batter after incorporate it like pour boling water into the cake tin after adding the batter ur cake will come out with a sauce! Thays what ive seen anyway. Lol i also am from divas can cook. Looking forward to making these bad boys!!! Yum!! :)

    I don’t bake a lot, but I sure read about it and watch a lot of it on youtube. This is the first time I’ve seen that water trick, or a cake batter that’s supposed to be so watery. Learn something new everyday, I guess :)  (BTW, discovered you through divas can cook)

    you should make the box mix then add the cup of boiling water. Only add about 1/2 a cup and mix till smooth. Use your hand to mix in the water and not a mixer.

    Hey Jack, love the show, smores cupcakes is definately one of the more creative confection cake recipies I have heard of. When it comes to filling the cake cups, try using a funnel. If you plug the bottom with your finger, fill the funnel, then while the funnel is over the cake cup, remove your finger and fill to your desired level. There will be less mess and waste plus more control as you dispense the batter.

    Wow, Jack your sauce is awesome. I was one of the lucky ones who was fortunate enough to receive a free sample. I just made a couple of big juicy steaks and I glazed your sauce over the steaks with a cooking brush and it was great. In fact I still have a little bit of the sauce left. I am soon moving so I can’t order it now, But I will be buying more. Thanks.

    I understand the price, we were lucky enough to get one as a gift from her mom. Ever since then I never went back to hand mixing. She still does on occasion though.

    Do you have $300? LOL no. I don’t bake enough to invest. I might someday but for now I try to do it the way everyone can do it. most people don’t have one. I love them though. I bought Aunt Myrna one last time I went out to Alabama.
