Betty’s White Chocolate-Macadamia Nut Cupcakes
In this video, Betty demonstrates how to make White Chocolate-Macadamia Nut Cupcakes. This recipe is very quick and easy, and the combination of flavors provides a special treat! Ingredients: 2 ½ cup all-purpose baking mix (I used Bisquick.) ½ cup sugar 3 ounces coarsely chopped white chocolate (You may use white chocolate chips, if you like.) 2.25-ounce package chopped macadamia nuts (about ½ cup) ¾ cup half-and-half (This is half milk and half cream.) 3 tablespoons vegetable oil 2 teaspoons vanilla extract 1 egg, well beaten In a large mixing bowl, combine 2 ½ cups baking mix and ½ cup sugar. Add 3 ounces of crumbled white chocolate and a 2.25-ounce package of chopped macadamia nuts and stir. Mix together ¾ cup half-and-half, 3 tablespoons vegetable oil, 2 teaspoons vanilla, and 1 well-beaten egg. Stir into dry ingredients. Stir just until dry ingredients are moistened. Spoon equal portions of batter into 12 muffin tins containing paper liners. Fill 2/3 full. Bake at 400 degrees (F) for 10 to 12 minutes, testing occasionally with a toothpick. When a toothpick comes out clean, the cupcakes are done. Remove cupcakes from oven and immediately place on a nice serving plate. These are wonderful when served warm, but you may also serve them at room temperature or chilled. With Mother’s Day coming up, if you don’t want to commit to making a cake, this is a smaller project that everyone will enjoy! I hope you like it! –Betty

I love white chocolate and I love cupcakes. I was wondering can I omit the macadamia nuts from the recipe? Would it still be as good? Also when I try making white chocolate muffins the white chocolate is never melty in the centre when I take the muffins from the oven, but once I made it the chocolate did ooze out (I may have used too much butter though) Do yours have melted white chocolate in the centre or does it retain its shape? Thanks xo

@EllyKSaysHi I don’t think this recipe translates well into a cookie recipe. I may make white chocolate-macadamia nut cookies sometime, but you could use a chocolate chip dough, and it place of the chocolate chips and pecans, you could substitute white chocolate chips and macadamia nuts.

@bettyskitchen Yes it does, thanks a lot!! I ran out of all-purpose flour the other day so I’ll subsitute self-rising in its place, taking away the salt and baking powder but again, thank you so much!

Cut shortening into flour mixture with a fork or pastry blender until mixture is crumbly. Store in an airtight container at room temperature for up to 6 weeks. Makes 13 cups.

Hey Betty! I love making desserts and plan on making this tomorrow for my mom
(its a surprise) and i was wondering what can i use instead of bisquick? I have self rising flour, baking soda & powder and i can buy a cake mix and if a cake mix, then what kind? Vanilla maybe? I love your recipes!

@Dark0Malkavian Oh no, there is macadamia nuts in the batter along with the dried strawberries but after it’s done baking I like to drizzle some white chocolate all over the top. It’s delicious!!!
@schmouie You could use walnuts, cashews, almonds, or peanuts. If the nut is hard, be sure to chop it into small pieces.
