Vanilla Cupcakes

Vanilla Cupcakes 1-3/4 cup flour 1 Tbsp baking powder 1/2 tsp salt 1/2 cup butter 1 cup sugar 2 eggs 1 tsp vanilla 3/4 cup milk 350 degrees F (180 C) 20-25 minutes Vanilla Butter Frosting 1/4 cup butter pinch of salt 2-1/2 cups icing sugar 4 Tbsp milk 1/2 tsp vanilla

    @emilyhf3 I think that would work…but if you overfill the muffin pans too much they could just overflow all over the place…they say “2/3 full” only. I would just use less icing and eat 2! ;0)

    Hi! I like lots of cake and little icing, i.e. a high cupcake with a thin layer of icing. Would putting more batter into the paper cup cause for a longer baking time and hence moisture loss?

    They shouldn’t splatter in the oven. Hmm, did you use the correct sized pan? Did you measure the ingredients accurately? The correct oven temperature? It’s really hard to say without seeing them…sorry to hear they didn’t work out. I would try again though!

    a while back i did this recipe and ot flat out didnt work i followed the recipe excatly and while it was baking in the oven the splattered everywhere and deflated di u think u know wat happended ? please write back because i would really want to lnow thanks!

    That’s great! So happy you enjoyed them – and made them your own with sprinkles! I am just putting 36 of them into the freezer that my son made – himself! – for his class on Monday!

    This recipe is AMAZING! I made it last night for my family and they loved it! I changed the icing just a bit and added some food coloring as well as some sprinkles, they looked absolutely delicious and tasted mouth watering! Thanks again for sharing…I’m trying the carrot cake recipe today :)

    wow, that is the nicest comment I have ever received! lol! Hmmm, not so slim actually! But a dark kitchen and low-quality camera help! Thank you!! (And I try to give a lot away, freeze some, and after a day I’m not that interested (although then I just make something else!!)

    Ok, thanks! Glad the coffee cake recipe worked out too! That’s the problem with the home-baked stuff: gotta eat it!! I have 2 pecan pies sitting on the island cooling, 3 banana loaves in the oven, 24 mincemeat tarts waiting to put in containers, and a gingerbread house ready for the kids to decorate after school! It’s going to be a fattening week!
